Having to deal with a child who seemed to go on food jags does put a great amount of stress on the parent or caregiver who has to get through these food battle on a daily basis.
Variety is an idea and presenting them in a most colourful, delightful manner is another to tempt and tease..and hopefully see some of these food get in can be such a challenge.
Sometimes the task can be an overwhelming one, so it's a good idea to break it into small jobs or batches. That way, it cuts down the whole preparation time when one needs to get a decent batch of quiche (for eg) ready and out on the Summer table when a request for a craving of carbo is on the alert.

Bacon & Onion Quiches
olive oil or melted butter
2 cups plain flour
150g butter, chopped
Filling
3 rashers bacon, rind removed
1 onion, thinly sliced
1 cup milk
2 eggs, lightly beaten
1/3 cup cream
finely chopped chives/optional
1/3 cup grated cheese
* sometimes i substitute bacon with crabmeat/salmon/canned tuna/sardines.

Hi Silver! Happy Memorial Day Weekend to you my friend! When you look in the dictionary under Picky Eaters, you will find a picture of my family there. The quiches look yummy but my family is so picky I don't know if they would eat them. I've struggled to get them to eat more chicken and pasta dishes which are more filling so they don't snack quite as much. I'm glad it's barbeque season now. The only chicken they like is barbequed chicken. I find myself making 3 seperate meals sometimes because everyone wants something different. UGH! I love 'em though and will keep trying to find some healthy recipies for them. They also love summer fruit, watermelon, peaches, plums etc so I try to keep a bowl of cut up fruit in the fridge to snack on. Okay now I'm hungry! Have a safe and restful weekend! Hugs, Loretta

Grrrr....my child is such a picky eater and she is almost 9! All she wants is pasta with butter or chicken nuggets. Thank goodness she like most veggies...but it's the main course that gives us trouble. Sometimes i wonder if they do this just for the sake of being difficult. Anyway, I make one meal and she can eat or go hungry (which she usually eats, but with lots of whining and drama). I don't like being a short order cook!
I have a feeling you and I are in for an interesting alliance.

I make a similar mini quiche and it is always popular at gatherings. It is definitely a good recipe. I also had a child who was a picky eater so sympathize with you. Until she was five the only meat she would eat was the chicken in McDonald’s salads! I think she thought they were French fries since they were cut like sticks.
The good thng about picky-eater kidlets is that most of them outgrow it eventually. Both of my sons turned their respecitive noses up at so many good meals over the years. Now both look forward to my cooking. Or maybe I just got better at it. ;)

The food looks delicious. I remember making meatloaf in a skillet and covering it with mashed potatoes. I didn't know at the time it was called shepherd pie. The sight of the masked pots got their attention, plus I put slices of top and melted them.

My son is a chef in Portland, he does a lot of party or weekend barbecue foods. If I lived nearer him I'm afraid I'd weigh a ton. But not him, he's tall and skinny. I don't understand how you chef types do it. All that good food. I guess that is a lesson, working in a hot kitchen burns calories.

BARB- that's how things are, isn't it. Mom's cooking is- i think, a lot more than just the taste we reminisce- our brains tend to link it to "comfort" .."love" ,memories of our own childhood..

I know what you mean about trying to get people to eat different things...although in my case it's not my kids it's my husband!! I have been known to chop vegetables very small so that they break down when I'm cooking so he doesn't know they are there!! (He reckons no-one should eat green food!!)

I am taking care of my 84 year old father with picky picky tastes that diminish as he ages. It's hard because it's just the two of us, and I like a much wider variety of veggies and such that he just won't touch. Sad... Right now I'm making a peach cobbler for dessert tho. Again, yum. :-)
I still feel like the whole world in on my shoulders concerning preparation of food and my children are in their early twenties.
